A few months ago I had a skirt steak marinated in beer. One of the best cuts of meat I’ve ever had. I decided to try chicken thighs with a little beer. I marinated a pack of chicken thighs in a large bowl with about 3 cups of Guinness, a hefty dumping of chopped garlic, and about a ¼ cup of honey. Came out very tender. I tossed them on the grill for about 15 minutes. When I do it again, I am going to take the leftover marinade and use some flour to thicken it so that I can brush some sauce on the chicken while it’s cooking. I served it with a simple salad of red leaf lettuce, carrots, and broccoli.
