What to Eat: Scrambled Eggs & Tortilla

Turn the oven to low broil. Coat your hands in olive oil, and rub a flour or corn tortilla to get a nice coat of olive oil. Put on top rack in oven for a few minutes to toast it, flipping once. It should be crunchy.

Coat a pan with butter or olive oil and scramble in 2-3 eggs. Take the eggs off, throw in spinach for a minute to wilt. Take out tortilla, put eggs on top, spinach on top of that, and you can top it off with some goat cheese! 10 minutes total prep time.
